What about valet? Americans tend to understand it as "servant who lords it over the others" and that works in the hierarchy of ghouls, thralls, and henchmen

You can go with "serfs". It's not like blood bonded are free to leave.

"Serf" doesn't have the implication of being more prestigious than a human minion however. It's conceptually close enough to Thrall that people will get them the wrong way round.

That's the big issue. The idea is that your Renfields are retainers, not simply slaves. You own all the frightened villagers, but Igor gets the honor of doing your bidding and having your trust. So if you're using servanting language, you want terms that mean high end servants, not low end servants. So Steward and Governess or Squire would make sense, while Maid or Serf would not.
