Platform (an extra large mount): Elephant or war wagon pulled by horses
Flying mount: Pegasus
Super Beast (something big and flashy for the final boss to ride): Holy Dragon
*not that all entries are for one setting, but each can be a setting to its own. So you could also write about post apocalytpic humans that ride giant beetles and so on.
